Recipe: Peanut Butter Banana Ice Cream
In this episode, Mindy and Guy Raz investigate how scientists in Canada may have discovered a way bananas may help to make ice cream un-meltable or at least melt in slow motion.
Bananas and peanut butter are a classic combination. If you like this combo as a snack, then you’ll surely go bonkerballs for this recipe! Creamy, cold and made with just three simple ingredients.
Ingredients:
- 4 ripe, frozen bananas
- 2 tablespoons peanut butter
- 2 teaspoons coconut oil
Wow-to:
- Slice up the frozen bananas into ½ inch thick rounds.
- Place frozen bananas, peanut butter and coconut oil into a food processor (or blender) and puree until smooth and creamy.
- If you like a soft serve consistency, serve it right up! Or refreeze for a firmer, hard ice cream consistency by spooning the mixture into a container and re-freezing for at least an hour.
